Omelette

Method

  1. Beat eggs
  2. Heat butter over a med-high heat until it sizzles. Tilt pan to make sure it's all round.
  3. Pour in the eggs. Slide the pan about over the heat. Stir with a fork to spread.
  4. The eggs thicken (doesn't take long). Once this has happened, leave the pan over the heat just a few seconds more to brown.
  5. Sprinkle with grated cheese.
  6. Tilt pan, run spatula under edge of omelette, jerk pan to loosen. Fold one edge to centre. Turn onto plate; flip & fold as desired.
  7. Season & serve.
