Omelette
- 2 eggs (more if you're hungry)
- 2tsp butter
- Grated cheese
- Fillings to taste
Method
- Beat eggs
- Heat butter over a med-high heat until it sizzles. Tilt pan to make sure it's all round.
- Pour in the eggs. Slide the pan about over the heat. Stir with a fork to spread.
- The eggs thicken (doesn't take long). Once this has happened, leave the pan over the heat just a few seconds more to brown.
- Sprinkle with grated cheese.
- Tilt pan, run spatula under edge of omelette, jerk pan to loosen. Fold one edge to centre. Turn onto plate; flip & fold as desired.
- Season & serve.
