Quince

5lb quinces 2 lemons 1 gallon boiling water 3lb sugar 2 R.t.spoons yeast or 1 tablet yeast

Wash + chop quinces. Boil fruit and thinly peeled rind of lemon in the gallon of water + simmer 10 mins. Strain over sugar, stir well + cover. Add std lemon juice + yeast when warm. Cover and leave 24 hours. Pour into jars and proceed as in "fermentation".
