4lb elderberries - after stripping from stems.
1 gallon boiling water.
1 lemon.
1/2 oz root ginger.
8 cloves.
3 1/2lb preserving or gran. sugar.
2 rounded teaspoonsful all-purpose wine yeast or 1 tablet yeast.
Strip berries from stems (use fork). Pour gallon of boiling water over them - mash and bash with a wooden spoon.
Cover, and stir daily for 3 days. Strain and boil with the thinly peeled rind of 1 lemon, the root ginger (well bruised) and the cloves. Bring to the boil and simmer for 10 mins. Cool, and strain over the sugar. Stir well; add the strained lemon juice and the yeast mixture (see under "yeast"). Pour into jars and proceed as in "fermentation".
