(Canonical method is allegedly to cut in half and then twist the halves to loosen the stone, as per avocadoi, and then score the halves and turn them inside out. When I twisted the halves the flesh turned into mango puree still firmly attached to the stone; do it over a bowl or you'll lose lots of juice. But still tasted fine as puree rather than cubes.)
