Fudgy Chocolate Layer Cake 75g plain chocolate 200ml milk 225g dark brown sugar 75g butter 2 eggs ½ tsp vanilla essence 125g plain flour 25g cocoa 1 tsp bicarbonate of soda Put the chocolate, milk, and 75g of sugar into a saucepan. Heat gently until chocolate and sugar have melted. Allow to cool. In a large bowl, beat the remaining 150g sugar with the butter until pale and creamy. Gradually beat in the eggs, vanilla, and chocolate milk. Gently fold in the flour, cocoa, and bicarb, using a figure-of-eight action to incorporate as much air as possible. Turn into two greased and lined sandwich tins and bake 180ºC (160ºC fan oven) for 25 - 35 minutes. Turn out onto a wire rack and leave to cool completely. Cover with Rich Chocolate Icing (see below). Top with grated chocolate. Rich Chocolate Icing 100g butter 175g icing sugar 1 tbsp milk 100g melted chocolate Beat the butter and icing sugar until light and fluffy. Gradually mix in the melted chocolate and milk. Use to sandwich cakes (using one third) and smother the rest all over the top and side of cake.
