CHOCOLATE MOUSSE Ingredients: 150g / 5oz dark cooking chocolate 3 tbsp fresh orange juice or brandy 1 tbsp instant coffee powder 1 egg yolk 1 tbsp icing sugar 300 ml /10 fl oz whipping cream Recipe: Break the chocolate into pieces and melt, together with the brandy or orange juice and coffee powder, in a heatproof bowl over a pan of hot, but not boiling water. Do not let the chocolate get too hot. Remove the chocolate from the heat and stir until smooth. Mix in the egg yolk and icing sugar. Allow to cool. Whip the cream until it has formed soft peaks. Do not over-beat or the mousse will turn grainy. Stir the cream into the chocolate mixture. Pour the mousse into dessert dishes, individual bowls or a large serving bowl. Set aside in a cool place or in the refrigerator for at least 2 hours before serving.
