Just to be "helpful"...  :o)

It looks like you're using Outlook (like me), in which case you want
Tools | Options.  On the Preferences tab, there is a button labeled
Email Options.  Clicking this will open a new dialog, at the bottom
of which are two combo boxes (drop down menus), which allow you to
"Prefix each line..." with the character of your choice.

Outlook is hideously unhelpful, in that in doing so it edits every
line, thus marking it as dirty and forcing you to spell check other
people's messages if you spell check on send.  It does make it easier
to read though...  :o)
