I use a "bean bag tray" (for want of a better description).

It's a solid flat surface about A3-sized, with a bevelled lip around the
edge---just sufficient for stopping the laptop slipping off when at
45-degrees.  The base is a bean-bag so moulds itself to sit stably and
comfortably on legs/duvet/knees/curved roof of boat and such, without
the laptop wobbling.
